agent, according to researchers from Kansas State University. Carcinogenic compounds known as HCAs (heterocyclic amines) form when meat is grilled. The KSU team, led by food science professor J. Scott Smith, discovered that rosemary extracts can stop HCAs cold in cooked beef patties, with a success rate that ranges from 30 percent to 100 percent. “Put a little bit on the surface,” Smith advises backyard chefs. “Rosemary extracts shouldn’t have much of an aroma to them. Most people don’t want a rosemary-flavored burger. So if you get the extract, you don’t really know it’s there.”
